Mile-High Quesadilla

Stack ’em high and open-wide! This is another video from Amanda who has recently shown us how to make a delicious cocktail.

Quesadillas came into our cuisine from the central and southern regions of Mexico. Mexican quesadillas are usually cooked on a comal, smooth, flat griddle. As a variation, the quesadillas can be deep fried in oil. The fried ones are prepared more like a pastry with the filling made of vegetables and cheese.

Amanda showed us a more traditional variation cooked in oven.

Bryce, the chef who made Black Bean Sauce, decided to share with us another delicious recipe.

What’s tofu? According to Wikipedia, it’s s a kind of food made by coagulating soy milk. The resulting curds then gets pressed into white blocks. Tofu can be very soft, soft, firm, or extra firm. Tofu has a subtle flavor and is very versatile when it comes to cooking. It can be seasoned or marinated or sweetened and used as a dessert or in desserts. It is a great source of vegan protein and fat.

You can add the sauce to your favorite pasta (like Bryce did) or use it with any other dish you want, for example, a stir-fry.

You may be wondering, what the heck are black beans? Well, in this particular context (a context of black bean sauce), it is actually dried, fermented soybeans, which get a dark brownish-black color during the curing process. That’s why they got the name.

The soybeans have a rich flavor and the black bean sauce is very flavorful, too.

Eggplant Bruschetta

Bella’s secrets to a tasty vegetarian meal!

Ingredients:

  1. eggplant
  2. tomatoes
  3. extra virgin olive oil
  4. cilantro
  5. fresh garlic
  6. onions
  7. curry powder
  8. parsley flakes

You can replace cilantro with coriander.

You can keep the eggplant skin or you can remove it. I know some people cannot stand it.
