Bryce, the chef who made Black Bean Sauce, decided to share with us another delicious recipe.

What’s tofu? According to Wikipedia, it’s s a kind of food made by coagulating soy milk. The resulting curds then gets pressed into white blocks. Tofu can be very soft, soft, firm, or extra firm. Tofu has a subtle flavor and is very versatile when it comes to cooking. It can be seasoned or marinated or sweetened and used as a dessert or in desserts. It is a great source of vegan protein and fat.

Eggplant Bruschetta

Bella’s secrets to a tasty vegetarian meal!

Ingredients:

  1. eggplant
  2. tomatoes
  3. extra virgin olive oil
  4. cilantro
  5. fresh garlic
  6. onions
  7. curry powder
  8. parsley flakes

You can replace cilantro with coriander.

You can keep the eggplant skin or you can remove it. I know some people cannot stand it.
