Low Carb Club Sandwich

Knowing the obsession of low card diet of some of our readers (looking at you, Lance!), we were very happy to see this submission with a low card club sandwich recipe.

Jen Mattson from Austin, TX makes the bread entirely out of cheese! How amazing is that!

To make her cheese bread, Jen used a silpat, a silicone baking mat that can be found in any kitchen appliances store. You can also by a pan +silicone mat together. For example, Artisan Metal Works make great mat & pan sets that have a commercial grade quality promising a long life.

For making this kind of “bread,” it is important to take hard cheeses like Parmesan or Parmigiano, Grana Padano, Pecorino Romano because they grate well and provide the proper texture to keep the sandwich in place. If you are looking for a cheaper alternative, you can use an aged Cheddar or an aged Gouda.

Spicy Mexican Potato Soup

Soup always hits the spot!

In this recipe, Amanda used munster cheese. Munster cheese is a strong tasting, soft cheese named after a French region Munster where the first rounds of cheese were produced.

A tip: If the soup turns out to be too spicy for you, you can always follow Amanda’s advice and add some lime juice in the soup. Also, you may want to keep these jalapeno seeds out of your dish 😉

Eggplant Bruschetta

Bella’s secrets to a tasty vegetarian meal!

Ingredients:

  1. eggplant
  2. tomatoes
  3. extra virgin olive oil
  4. cilantro
  5. fresh garlic
  6. onions
  7. curry powder
  8. parsley flakes

You can replace cilantro with coriander.

You can keep the eggplant skin or you can remove it. I know some people cannot stand it.
